Lots of greens can be substituted for beet greens in this recipe. Try spinach, as suggested in the recipe, or carrot tops; a mix of fresh herbs like basil and parsley; kale; etc.
Other nuts can also be substituted for walnuts - try almonds or sunflower seeds.
Use a premade jarred pesto if you prefer. Look for one that uses olive oil over other oils if possible.
Make this dish gluten free by using a gluten free pasta.
