Cabbage Soup

  • To make this a one pot meal, add protein with your favorite beans, shredded chicken, or cubed firm tofu.

  • You can use frozen vegetables for all the vegetables in this recipe if needed. Add frozen. You may need to simmer a little longer to ensure everything fully thaws and warms through.

  • You can also treat this soup as a "clean out the fridge" type of soup - most starchy and leafy vegetables you have on hand would be great (e.g., spinach, cubed butternut squash, kale, sweet potatoes, etc.) Avoid adding peppers and other cruciferous vegetables like broccoli and cauliflower.
