Medi For All Tips:

  • Use olive oil instead of canola oil.

  • Skip the cilantro if you don't like it.

  • Substitute frozen spinach for fresh if needed. Thaw spinach and wring out excess moisture in a clean kitchen towel. Chop roughly before adding to pot.

  • It will alter the flavor slightly, but green bell peppers can be substituted for poblano if needed.

  • Use Greek yogurt instead of sour cream for the benefits of fermented dairy.

  • Pair with whole wheat or corn tortillas, or a slice of whole grain toast for a well-rounded meal.
