Daily Meal Plan/Ideas:

  • Breakfast: Scrambled eggs with peppers and whole wheat toast or tortilla

  • Lunch: Black bean and salmon tostadas with brown rice and salsa

  • Dinner: Cod with tomato-basil salsa, baked sweet potato and salad greens dressed with olive oil

  • Dessert: Baked oats with blueberries

  • Snack: Cottage cheese with pineapple or edamame and baby carrots

  • Beverage: Date sweetened horchata
