Medi For All Tips:

  • If leeks aren't in season, or for a more affordable option, use a whole yellow or white onion, chopped.

  • It's okay to use regular chicken or vegetable broth rather than low sodium, if that's what you have. Be sure to taste before adding any additional salt.

  • Frozen zucchini or yellow summer squash can be used in place of fresh.

  • You can substitute other vegetables if you don't have or don't like zucchini. Try sliced carrot, yellow summer squash, or diced sweet potato. Simmer until all vegetables are tender.

  • Make this recipe dairy-free and vegan by skipping the Parmesan. Make this recipe gluten free by using a gluten free orzo.
