Medi For All Tips:

  • Use regular versions of tomato paste, broth, and canned beans, if that's what you have, rather than buying new low-sodium versions.

  • If you don't need this dish to be vegan, use chicken broth if that's what you have, rather than buying vegetable broth.

  • Use drained canned chopped tomatoes rather than sun-dried tomatoes, for a more affordable option.

  • Look for lentils in the bulk section of your grocery store, so that you can buy only what you need.

  • Add in any other fresh vegetables that you need to use - celery, green beans, and zucchini or squash would be great additions. Add any leafy greens towards the end of cooking time, as they don't need to cook for a long time.

  • This soup will freeze very well, so make a double batch and freeze if you like it!
