It's fine to use the regular versions of ketchup and soy sauce if that's what you have.
Be sure that your pineapple juice is 100% juice with no added sugar or sweeteners! The juice from a can of pineapple is a great option.
Use brown rice if possible, for the maximum amount of fiber and whole grains.
You can use a bag of frozen mixed vegetables for a more affordable option in this dish, but the vegetables will likely be a different texture than using fresh vegetables. Cook vegetables from frozen. You may need to add a splash of water and cover for a minute or two to let the vegetables steam and soften, then cook as directed.
